Saturday Night = family night…you can catch us outside when the weather’s right or inside snuggled up with a movie. It’s been a hard week □įriday night has become “clean out the fridge” night around here and this mama doesn’t mind. Just go ahead and add a little extra cheese too. You ju add t cant go wrong with chicken, broccoli, and CHEESE. And I’m here for it! The hubs asked for a good casserole this week and this one was the money. Two Words: Comfort Food! When you are born and raised in the South, casserole is it’s own food group. Thursday: Chicken, Broccoli, and Rice Casserole This dinner! It’s good the night you make it and as leftovers, the rest of the week! And it says one pot but I’ve never been able to do that so you have my permission to use alllll the pots necessary (and then let your kids do the dishes!) The dried cranberries, celery, and onion is so, so good! ![]() This is a complete dinner in the crockpot! Oh, and add the extras to the stuffing. The flavor in this is AMAZING!!! And definitely follow the writer’s suggestion of steaming the green beans and carrots on top separated from the chicken and stuffing with a little aluminum foil. Who doesn’t love that?!! And, for the sake of time, I grabbed some frozen sweet potato fries and tossed them in the oven for a quick, easy side. This recipe suggests using buns but it turned out a little more juicy (read mushy buns) so we decided next time to try Texas Toast. So here ya go! As you try some or all of these, I’d love your feedback of what your family loved or hated or really any little nuggets that you learned along the way. During the school year, my oldest packs her lunch every day and our weeknight meals provide enough leftovers for the hubs to take his lunch daily also. I do the majority of my shopping at Kroger because these sweet people shop for me and load my groceries and they are the closest things to angels on earth that I’ve ever met. Since this is my first weekly meal plan, here’s a few little backstory things to note. So, meal planning isn’t your thing and sharing mine with help you get to your happy place then I’m here to help!Īnd while I’m on the confession train…this whole meal plan thing came after I realized I was making the same thing week after week (you can only eat so much spaghetti and grilled chicken, yall) and my husband called me out. Who knows? But planning brings me joy and a joyful Jen is a much less stressed and overwhelmed Jen…which equals a much happier place to be around these parts. Maybe its my days as a former elementary school teacher or my deep need for all things organization or trying my hardest to fight the dreaded mom brain. long! My sister-in-law and I were talking last night and she asked if I had ever considered sharing my weekly meal plans on the blog. We’re getting ready to head out for a day full of swimming and all the yummy foods with family…and I’m pumped! Family time is my love language all. ![]()
